The Le Chai team saves the Les Dents de Lion label for their most aromatic wines, here featuring the most deliciously scented of them all, Gewurztraminer. There's very little of it grown in the Languedoc, but Mark Hoddy knew just where to go to find grapes which had exotic, ripe fruit, yet also an essence of freshness to lend balance to the wine. One parcel was from the high, ocean influenced hills of Limoux, while the other was from next door to the 'First Growth' Domaine Gassac estate. All cool fermented with not a breath of oak, this cracking white is all about fruit - lychee, apricot with a spicy overlay and an underlying minerally zip. It's a delightful glass on its own, as well as making a perfect partner to spicy noodle stir-fry.
