This characterful, delicious white is a collaboration between our award winning chief winemaker Jean-Marc Sauboua, and owner of Château Le Coin Ludovic Roussillon. Its secret is the 90% Sauvignon - Gris that is, not Blanc - which adds extra spicy richness to its limey freshness. All the grapes are lovingly tended at Ludovic's superb estate in the Entre Deux Mers, just over the river from Le Chai au Quai in Castillon. His claret is always a hit and four years ago we persuaded him to make us a white too. The soils are ideal - the limestone helping to produce real concentration in the fruit. About 5% was oak fermented to lend extra richness, as did small amounts of old-vine Semillon and Sauvignon Blanc. Delicious solo or with a creamy gratin.
