White Heron has been making fabulous blackcurrant liqueur for 140 years. On their farm (named Whittern meaning White Heron) in the wilds of Herefordshire, they grow some of the most succulent blackcurrants in the country and harvest them in midsummer. Using a technique similar to winemaking, they capture the intensity of the freshly picked British blackcurrants by fermenting the juice with Champagne yeast. It’s then fortified with a little vodka and a dash of sugar. Sweet at first before an irresistible sharpness kicks in, White Heron Cassis makes a delightful apéritif served straight, over ice. It also goes beautifully with sparkling wine (of any nationality) and a roll call of cocktails, and enhances jus in game and other red meat dishes.
