Vondeling in Paardeberg is the pride and joy of English-born Julian Johnsen. In the 1990s, he came to South Africa to work a vintage at a relative's wine estate and never left. He bought Vondeling in 2001 and from the start, aimed for the top, engaging the award-winning winemaker Matthew Copeland. This top Chardonnay uses grapes sourced solely from a tiny, tree-lined vineyard high on the estate. Cool temperatures ensure a long, slow ripening and freshness in the wine, while whole bunch fermentation helps retainit. It's very much hands-off winemaking, with wild yeast fermentation in large oak barrels. A total of 11 months of lees ageing has developed terrific richness and depth – a glorious mouthful of wine. Gently chill and open early.
