Nestled at the foot of the dramatic Helderberg Mountain, Stellenbosch is one of the most respected South African wine regions and also one of the most spectacular. Vergelegen, with lush vineyards, elegant homestead and sprawling yellowwood trees, comes close to not just visual perfection but technical perfection too. The estate has won a global reputation for craftsmanship and attention to detail. This Chardonnay uses fruit from the property’s top two vineyards, vinified in an impressive multi-level winery built into the top of a hill – allowing wine to flow by gentle gravity from press to cask. Wild yeasts, oak fermentation and ageing in 35% new barrels result in this remarkably complex white. Partner with crab, smoked salmon or lobster.
