Despite a long tradition of making fine wines, Ribera del Duero (home to Vega Sicilia) has come late to DO status. The region wasn't recognised until 1982, but today is regarded as one of Spain's finest. Its fine wines are centred on high-altitude Tempranillo (known here at Tinto Fino), which lends wines a superb freshness, elegance and length. Cillar de Silos is a leading estate of the DO, using fruit from some of the oldest vines in the region, many well over a century old. They’re grown at high altitude, too, where day and night temperature variations help retain freshness, aroma and complexity. Aged for 16 months in new French oak barrels, Torresilo has layers of dark fruit, mocha and nutmeg. Decant for an hour to let the flavours open.
