Coteaux Cabrerisse is a forgotten tiny IGP appellation reborn! Anne and Xavier de Volontat are the 'rebirthers' - the only producers using this IGP name. This community-minded couple (Xavier is the local mayor, president of the local winegrowers and helps run the local paper!) are the 7th generation to run their family estate, set in a beautiful 12th century convent. And yes, the nuns also grew vines. The village is St Laurent de la Cabrerisse and it's set between the two great crus of Corbières – Boutenac and Lagrasse. A real taste of southern France, it uses spicy Syrah with plummy Merlot and the rich, velvety black fruit of Marselan. A luscious, smooth red to enjoy on its own, or with sausage and mash or a rich herby casserole.
