Siren Craft is a small outfit based in West Berkshire with a clear, stated aim: to arouse people’s curiosity in the endless flavour possibilities of beer, believing it can be enjoyed in the same way as fine wine. The guys use up to eight times as many ingredients as you find in standard, mass-produced beer. They also take a slow, artisanal approach to crafting it, saying it will be ready when it’s ready and not because it’s due out the door. Calypso is one of Sirencraft’s four core beers and a lovely introduction to their range. And never ones to rest on their credentials, they are always changing the recipe for this top-tasting sour, adding a new trio of hops to the dry hopping stage. Constant, however, is its pleasing tropical tartness.
