Pieropan is synonymous with the finest quality wines from Soave, in another flavour realm to other estates. Not only that, the founder – Leonildo Pieropan Snr, a former physician – invented Soave Recioto, a delicious, sweet wine using air-dried grapes, like Amarone. Within their 30 hectares of vines the family have three single cru vineyards, from which they make flagship wines Calvarino and La Rocca. You could call this their standard wine, but that wouldn’t do it justice. Using organic Garganega and Trebbiano grapes from vines up to 60 years old, grown on volcanic soil, the wine shows pure fruit, with not a drop of oak. Ageing on its lees for six months lends a creamy complexity. A white to savour on its own or with creamy fish pie.
