Regardless of fashion, quality never goes out of style – as proved by Penfolds Yattarna. It was launched back in 1998, when Aussie Chardonnay was falling out of favour with the wine buying public. Yet the Penfolds team knew the sister white for Grange, Australia’s most sought after red, could only be a premium Chardonnay. Yattarna isn’t tied to a single region, allowing Penfolds the luxury of picking fruit from each vintage’s best performing sites. And in 2013 over half the fruit came from Southern Tasmania, specifically Coal Valley and Derwent Valley, with the remainder sourced in the Adelaide Hills. It was aged in oak – 62% new – for eight months to add creamy complexity. Decant before serving with pan-fried scallops or ricotta ravioli.
