Since its foundation by Christopher and Mary Penfolds in 1844, Penfolds has been a leading name in wine. However, it was the advent of Max Schubert as head winemaker in 1948 that thrust them onto the world stage. Of course, they are the cellar behind Grange – the priciest wine in all Australia. Today, Penfolds winemaking mantra is not to be bound by tradition, but each year to judge the best regions for each grape variety. In 2019, Bin 311 sourced grapes from Tasmania, the Adelaide Hills and Tumbarumba. All three of them ocean-cooled to lend a brilliant freshness, aroma and minerality to this high-scoring white. Ageing in part new oak lends a lavish creamy spice to the vibrant fruit. Decant early or cellar.
