Founder member, Luigi Valle, is renowned for bringing some of the most advanced techniques to Friuli in the 1950s and 1960s. They include introducing the horizontal wine press and the first sterile vacuum bottling line. He also identified Rosazza as a special subregion and planted vines there. It's on these steep hillsides, near the centuries-old Rosazzo Abbey, that Paolo tends his vines today. He uses higher-density vine training like his father (a technique that pushes grapes to develop extra flavour intensity) and tends them with a gentle hand – as much for mother nature as for the quality of the grapes. Paolo cool ferments the wine to ensure he captures maximum freshness and recommends serving it with herb risotto or antipasti.
