Digging into the history of his old north London premises, craft distiller Ian Puddock found that a key figure in its story was a Caribbean baker called ‘Wen’. That triggered the making of Old Bakery Rum. It’s a unique product. Ian buys in crude spirit, carefully redistills it, cuts it with fine mineral water, and ages it in barrels previously used to age mead and sweet wine. The result is a super smooth dark rum with wonderful vanilla soft caramel notes. You can sip it neat or add Merchant’s Heart Ginger Ale, carefully made with fresh ginger (most ginger ales use dried). However it’s served, Old Bakery Rum is a treat which creates a warming glow in everyone lucky enough to try it.
