Muscadet is a French classic and with a new generation of winemakers taking over family domaines, there’s an even greater impetus for quality. Domaine des Herbauges was founded in 1864 and came into the hands of third generation owner Luc Choblet in 1980. Luc decided environmentally friendly methods were the way to obtain even more flavour from his grapes and their terroir. Now Jérôme has taken over from his father and is moving quality even higher. He says: “Winemaking is my passion, as is cultivating the very best vines. Each step of the process determines the final expression of the flavours and aromas of my wines, from the most intense to the most delicate.” A fine Muscadet, aged for a year on lees, this is a classic match for oysters.
