Aligoté isn’t the classic white grape of Burgundy, but in the hands of the Lupé Cholet family it makes a fine white. This highly regarded estate was founded by viticulturalists the Count de Mayol de Lupé and Viscount Cholet at the start of the 20th century, and today they are renowned for top class Burgundy from a variety of appellations. Grapes for this refreshing Aligoté come from vineyards above the Côte d’Or, planted on fast draining lime and clay soils. Cool fermentation in stainless steel vats captures the crisp apple fruit, while a few months ageing on its lees (the natural sediment from fermentation) lends a lovely creamy weight. Lively fruit with grippy minerality and floral notes, this is a tasty drop solo or with creamy dishes.
