Rhône fanatic and third generation winemaker Joseph Bousquet has long been obsessed with the pricey whites of Condrieu. So in his cool, higher altitude vineyard, just north of Montpellier, he grows the prized Viognier grape. Here, he nurtures old vines on fast draining soils to produce concentrated grapes with excellent aromatics thanks to warm days and a big drop in temperature at night. Using only lightly pressed juice, he ferments it all in vat, no oak, with special yeasts to bring out the wine’s tropical fruit and minerality. The wine is named after the dandelions with jagged leaves (les dents de lion) that grow in the vineyard and helpfully compete for water. Pure, fresh and spicy, it's a hit with seared scallops or white meats.
