Le Chai winemaker Mark Hoddy adores the Loire’s noble Chenin Blanc grape. He also loves the exciting wines of the Languedoc. So, when it was decided to make a special Chenin Blanc, true to the rebellious nature of Le Chai, he sourced the grapes from the south of France, rather than where you might expect. In fact, there’s more logic to it than that. In the Loire, this variety produces terrific whites – from Anjou to Savennières – but it’s also native to the cool, high altitude Limoux. Mark is good friends with growers there, and in 2016 he teamed up again with Bruno Bouche, who has some remarkable Limoux vineyards. Vinified in the cool Le Chai cellar in the special egg-shaped fermenter, this is a vibrant, lemony white. Serve with fish pie.
