Decanter has described Le Chai au Quai as “a fabulous venture”. It’s our own cellar on the banks of the Dordogne in Castillon. Here, Haut-Brion trained Jean-Marc Sauboua and his team hand finish special parcels of wine selected from top vineyards. We’ve made this charming Pomerol every vintage since 2004, but we think 2012 is particularly impressive. It’s thanks to a top négociant pulling out of a deal, leaving this outstanding vat ready for the taking. The wine is from a small property with vineyards planted on prime soil, so the quality of the grapes is superb, while a year in fine Taransaud barrels lends real finesse. Lovely now, if you decant it for a couple of hours, and with a long life ahead. Reserve for your finest meat dishes.
