Here's a wine born of a Covid mountain rescue! Fourth generation winemaker Jean Cavaillé usually keeps this crisp, Alpine-fresh delight close to home, where the ski-mad locals worship its dance-on-your-tongue freshness (particularly during Après Ski!). Through the pandemic, there’s been no skiing, of course, so local sales have plummeted. And we finally get a chance to share it with you! Made from concentrated old-vine Jacquère, a regional star that is "sculpted by fresh, sappy acidity", and "whispers stone rather than singing fruit"(Decanter). An exciting, floral, flinty white, pepped by spice, and with additional roundness from eight months lees ageing. Zesty fresh, it pairs well with Asian cuisine or an Alpine-authentic cheese fondu.
