Here's one for the collectors - a rare, 26 year old expression of the world famous Glenfiddich Single Malt Whisky. Very aptly named Excellence, it was created to honour Glenfiddich's line of continuous family ownership since William Grant founded the distillery in 1887. To create this lithe, complex dram, the whisky was left to mature in fine oak casks shipped to Scotland from America, where they were previously used to age fine bourbon. The American oak is uniquely porous, allowing the casks to 'breathe' in the pure Highland air. Over time, the wood softens the spirit and imparts layers of spice and vanilla which grow more complex with age. The barrels are also lightly toasted, giving the whisky a golden hue and adding cinder toffee notes.
