For a fresh, beautifully balanced white, chill down a bottle of Ayar. It's from the family winery Viña Errazuriz, which was founded in 1994, with extensive vineyards in Colchagua and Curicó. Their winemaker is Tibisay Baesler, who passed her university studies with the highest mark in her year. With 15 years experience now in a handful of different Chilean wineries, she is devoted to making pure, fresh whites at Errazuriz. The grapes for Ayar are all from Curicó, just 65km from the towering Andes mountain, that play such an important part in shaping this wine. Clear sunny days, cold nights thanks to the mountains and meltwater from the snow on its higher slopes result in a crisp, papaya scented white. Tasty with chicken or savoury pancakes.
