Western Australia’s Margaret River is a fine wine region established, tentatively to begin with, in the 1960s. Flying Fish Cove doesn’t claim to be one of the first wineries – it was founded in 2000 by a group of 20 growers, intent on quality. They bought a 130 hectare estate 25 km north of Margaret River town in renowned Wilyabrup, and since their inaugural vintage in 2001 they’ve grabbed the world’s attention with a range of extremely well crafted wines. Senior winemaker today is Simon Ding. For this wine he used grapes from Wildberry Farm Vineyard, ageing in new French oak barriques for structure and finesse. Cabernet is considered the region’s signature red and you’d be hard pressed to find a finer example. Decant early so it opens out.
