Everything about Flagstone and its somewhat eccentric owner, Bruce Jack, is like a breath of fresh air. He is poetic in his inspiration for Dragon Tree – a trip to Gigondas in France, where he first encountered terrifically old vines and wines with striking depth and velvety texture. This is what he set about imitating. This red is a powerful blend of Cabernet, Shiraz, Pinotage and Merlot (plus a sprinkle of oddities such as Barbera, Tinta Barocca and Touriga Nacional), all from particularly rocky and quartz rich soils that lend the velvety tannic mouthfeel he was after. Aged for 15 months in oak barrels, it’s rich and weighty, and best enjoyed with strongly flavoured foods – try char-grilled steak, roast lamb or game casseroles.
