The wines seem to perfectly straddle the middle line between the elegant restraint of the Old World and the bright fruit exuberance of the New! Elevado is a terrific tasting Chardonnay from Chile's pristine Central Valley. There, long hours of brilliant bright sunshine ripen the grapes to perfection, while elevated vineyards ensure they retain a lovely freshness too. The grapes for Elevado are taken from various plots to gain a balance of fruit and freshness, while fermentation at a low temperature in the modern cellar further enhances its bright character. It makes a tasty glass solo or with chicken or fishcakes.
