Domaine des Verchères is a 20 hectare property in the Mâconnais, run by father and son André and Rémy Dupuis. Without a cellar of their own they send their grapes to Bernard Derain at Cave de Mancey, with whom we've been working for 30-plus years. The quality of this estate's grapes is always very high, which is partly due to the age of the vines (some 80 years old) and also because close planting has encouraged even more concentration. All the grapes are hand picked, then half put into top quality Burgundian oak barrels for fermentation, the rest into stainless steel. Malolactic fermentation and lees stirring add to the richness, creamy texture and viscosity of this luxurious wine. Serve cellar cool with creamy white meat or fish dishes.
