Seventh generation Domaine Servin has a fine reputation, and deservedly so thanks to outstanding winemaking and top Cru sites in Chablis. The Aussie winemaker Marc Cameron married into the family and with François Servin has produced this fine 2017.

Domaine Servin is a fabulous, long standing family cellar, less well known than it should be. That’s despite Wine Advocate marking them out as deserving a higher reputation. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s son-in-law, Aussie winemaker Marc Cameron. This fine Premier Cru is from a southwest site, only separated from Grand Cru Les Blanchots by a narrow ravine. It produces grapes of wonderful aromatic intensity and purity. 2017 was a fine vintage, spared from frost, unlike the rest of France. Marc teases out the richness of the fruit, carefully fermenting the wine, ageing it on lees and capturing all the flavour in bottle. Open early, let it breathe or cellar.
