This exemplary 17th century estate is today run by François Servin, with the assistance of his Australian brother-in-law Marc Cameron. Together they make wines of “great elegance, purity and length” (Jefford) – from village Burgundy up to the lofty Grands Crus. The vineyards of this prized Grand Cru – one of only seven in Chablis – lie on a steep, south facing slope, up to 250 metres above the river Serein. Its northerly location and sun-blessed position accounts for its wonderful intensity, ripeness and steely poise. Servin’s Bougros is showing very well, with good spice from some new oak. The wine will improve with age, developing a wonderful, honeyed, nutty complexity. Serve in large bowled glasses with fine seafood or poultry dishes.
