Meticulous grower and winemaker Bernard Moreau has been in charge of his small family domaine since 1982. He has just two hectares of Chardonnay, between 20 and 28 years old, so yields are naturally low and flavour is wonderfully concentrated. He tends his vines with the utmost care, using sustainable, environmentally friendly methods. All the grapes are hand picked, then the wine fermented and aged in barrel. While a quarter of these casks are renewed each year, most are 400 litre in size, rather than the usual 225 litre. This lends just the right balance of creamy roundness, crisp minerality, elegance and gentle vanilla complexity. Serve cellar cool to best enjoy its subtle flavour and partner with veal in white sauce, chicken or salmon.
