This is a fine bottled fermented sparkler from a small group of vine growers, who first came together in Vouvray in 1953. They have since expanded but still number just 40. They all share a passion for Chenin Blanc - the only grape permitted in the Vouvray appellation wines. It's a much underrated grape, with the freshness to make terrific, long ageing fizz, but also the vibrance and balance to make very noble still wines. De Chanceny is made by the traditional method, the same as Champagne, with the secondary fermentation carried out in bottle. This lends a real delicacy and finesse to the fizz, while long lees ageing adds the toasty brioche complexity. Chill well and serve at your next celebration, or simply when you want a glass of fizz!
