Tasmania - it’s a stepping-off point to the end of the earth. Yet this remote island harbours some very precious treasure. Dalrymple’s celebrated 12.3 hectare vineyard in Pipers River, Tamar Valley, is one. It was founded in 1987, then snapped up by the renowned Hill-Smith family 20 years later. Its vineyards share similar conditions to the best plots of Burgundy, so not surprisingly they have a stellar reputation for cool climate Chardonnay and Pinot Noir. Cave Block uses grapes from the two best plots of the vintage. Whole bunch pressing and wild fermentation in barrel all add up to impressive complexity, especially in the hands of winemaker Peter Caldwell. A wine that'll age magnificently; superb with seafood and white meat dishes.
