Guillaume Bonzoms leads this innovative modern cellar near Béziers that was founded over 70 years ago. They work with 167 small, family growers nearby to produce wines that are “loyal to the philosophy that a glass of wine simply has to be delicious”. Taste this white for starters – a rare blend of native southern varieties – creamy stone fruit Grenache Blanc, floral scented, spicy Viognier and the citrus intensity of Vermentino (top grape of Corsica and Sardinia too). It’s all fruit, with no oak, ripened in that blazing Mediterranean sunshine and captured by cool fermentation to retain its freshness. Chill down and serve with creamy chicken pie, spicy seafood stir-fry, Thai fish cakes or char-grilled salmon. It’s a tasty glass solo, too.
