Keen to experience a characterful, ripe white a little different from the norm? Try Le Chai’s La Révélation. Its prized grapes come from Joseph Bousquet’s domaine near Montpellier. He inherited 15 hectares, bought another dozen and in 1997 added the prized Les Quatres Pilas and its 6 hectares of vines. Le Chai’s Mark Hoddy loves the quality of Joseph’s fruit (some of the best in 2016) and works with him to produce a small selection of wines at Le Chai. La Révélation uses pure Roussanne – one of the much-loved white Rhône varieties – sourced from Joseph’s old, high altitude vineyards. Hence the wine’s elegance and zip. Ripe peach, herb and white pepper – this rounded white is tasty solo and a treat with white meats, and creamy fish, too.
