Doisy Védrines has been in the Castéja family since 1840 and is today run by Pierre Castéja. He maintains exceptionally high standards at the cellar and will declassify a whole vintage if he believes the wines won’t be up to Grand Vin standard. Batches of grapes are fermented separately in oak barriques, then left to mature. After a year, each vat is tested to see if it's worthy of inclusion in the Grand Vin. 2017 was a low yielding vintage in Sauternes with weather in October perfect for encouraging botrytis, or noble rot – the condition essential for producing the world’s finest dessert wines. Critics describe the "energy and purity" of this wine. One to savour on its own or with a strawberry tart with crème anglaise or blue cheeses.
