Champagne is the pinnacle of refinement amongst sparkling wines, and Veuve Clicquot is one of its most famous exponents. Madame Clicquot, who took over the estate in 1805, created the first crystal clear Champagne, after inventing the technique of riddling – using a specialised rack to enable the yeast to be collected in the neck of the bottle. It was under her guidance that Veuve Clicquot became the substantial and respected Champagne house we know and love today. And Veuve Clicquot hit the headlines recently when an unopened 1893 vintage was discovered inside a sideboard in a remote Scottish castle, still in mint condition. Blended from some rather more recent cuvées, this benchmark Champagne makes the perfect toast at any celebration.
