For years, Tony Laithwaite and winemaker at La Clarière Jean-Marc have wanted to make a grand estate white to match up to the estate’s prize winning claret. Bordeaux’s Castillon, however, is purely a red wine appellation, so no one grows white grapes. By looking just outside the area, over the Dordogne river, they’ve found just the spot. A single vineyard, formerly tended by one of the region’s top viticulteurs, so it’s in excellent condition. Half Sauvignon Blanc and half its more exotic, fuller and spicier cousin, Sauvignon Gris, the wine was fermented in new French oak barriques, then aged there on its lees for eight months. It has a lush, creamy texture and spicy richness. Open early and decant or cellar. Superb with sauced white meats.
