Since its launch, Casa Silva’s Cool Coast has become widely regarded as Chile’s best Sauvignon Blanc. It's from Paredones, a new region in Colchagua Valley, described by Decanter as "a source of terrific whites and reds". The rolling vineyards, planted on mostly granite soils, lie just 6 km from the sea, so are well ventilated and cool. Family owned Casa Silva has been one of its ardent pioneers, championing the region for its ability to produce seriously fine, cool climate wines. In particular, it excels with Sauvignon and Pinot Noir. This Cool Coast Sauvignon is brimful of ripe pineapple fruit, cut through by citrus minerality. Perfect on its own, it also makes an elegant partner to salmon with spicy avocado salsa or herby fritters.
