Bordeaux-born, Hervé Fabre took off in the 1990s to find a new source of fine wine. He discovered the wealth of old vine Malbec in Argentina and established the now-renowned Fabre Montmayou. In 2017, with his wife Diane, he decided to invest back in France, in Cahors, where fine Malbec originated. Indeed, wines from Cahors were once more prized than claret. He acquired a beautiful estate in Parnac – three properties in fact that took in the high limestone plateau, steep slopes and the valley. They were Prieuré de Cenac and Châteaux de Grézels and Saint Didier, and include areas that he believes are some of the finest terroir in the world. This is a supple, fruit laden red with an earthy warmth. Enjoy with roast red meats or rich casseroles.
