Prosecco is a delight to drink and has become the UK's No.1 choice of sparkler. Yet the berry fruit charm of a pink fizz is possibly even more delicious. This is one from Marco Flacco, who has largely been based in Italy, but has worked with cellars afar afield as Australia, South Africa and Argentina. He makes the Brezza del Drago in just the same way as Prosecco, but uses the native Raboso grape, one that's almost unique to the Veneto. It has high acidity, perfect for making sparkling wine. To this Marco adds a little Merlot to soften the fruit with creamy rounded notes of plum. Named after the legendary dragon that lives in the depths of the Venice lagoon, this is a delight to drink as an aperitivo or with fish soup, seafood or risotto.
