We are always on the lookout for a new source of high quality Prosecco and were delighted when an old friend put us in contact with the Tombacco family. The estate was founded a century ago by Battista Tombacco, grandfather of current owners Cristian and Andrea. This frizzante is crafted from their estate grown Glera grapes, gently pressed prior to a slow, low temperature fermentation. Cristian then left the wine on its lees for 20 days for extra layers of creamy complexity to balance the citrus notes, before adding the sparkle and bottling. Wonderful aromas of apple and rose petals lead to refreshing mouthfuls of apple, lemon and tropical fruit with a gentle fizz. Serve well chilled as a delightful aperitif any time, or with light dishes.
