With the rise across the world of tapas bars and the recognition of Spain's amazing cuisine, comes the ascendance of fine sherry. It takes years of ageing in the cool dark cellars of a bodega, in the traditional solera system, to make these fine wines, so they really do represent superb value. The driest style is fino, made from Palomino grapes and aged for three years under flor (the essential layer of yeast cells that cover the wine). This super-fresh, nutty dry fino is from Barbadillo - a family bodega founded in 1821 with many top awards. In 2015 it was named ‘Best Winery of the Year’ by Guía Peñín and its Solear Manzanilla was awarded ‘Best Manzanilla in the World’. Rustle up some tapas, cured hams, olives and pour yourself a glass.
