For a great experience in Burgundian Pinot Noir look to the wines of Domaine Lignier. This family property is run today by the fourth generation, Benoît Stehly, who is also the winemaker. It boasts 15 hectares scattered over some of Burgundy’s most acclaimed sites. That includes Clos des Ormes, which lies on the hill just below Grand Cru Clos de la Roche. Both enjoy shallow, rocky limestone that drains well and is ideal for promoting concentration. Named after the once abundant, now endangered, elms that dotted the hill, this 1er Cru produces superb, well-structured wines with dense fruit and great ageing ability. Still young, this wine will benefit from time in a decanter to allow its complex flavours to unfurl. A great red with game.
