Occasionally, cellars find themselves with surplus wine – even boutique wineries with Halliday's top rating of 5 red stars, like the one where Dan sourced this top class Chardonnay. Sometimes, if they’re short of cellar space, or they need up-front cash, they’ll sell their surplus at a knock down price, providing their name remains a secret – they have a reputation to protect. Dan just happened to be visiting when the 2018 vintage was coming in. They'd discovered a few barrels of 2016 and wanted to clear it quickly. These guys are Aussie royalty when it comes to Chardonnay, so Dan was overjoyed, inside! He took the lot. Ripe, rounded fruit with underlying stony freshness, this is an elegant white, great with sauced white meats or fish.
