Palo Cortado is a highly prized style of sherry combining characteristics of Amontillado and Oloroso. Apostoles is made by the great Gonzalez Byass, a sherry house founded in 1830 and which evolved into a partnership with an Englishman a few decades later. It is still run by the Gonzalez family and its sherries are world renowned. Apostoles is made from the region’s Palomino and Pedro Ximénez grapes, and matured in casks for 30 years. Like a Fino, it starts life aging under a layer of flor yeast before going on to age without the flor in the same way as Oloroso. Sip slowly on its own to appreciate its incredibly rich and complex flavours. It’s amazingly long, too. Can also accompany salted almonds, aged cheeses and strong flavoured tapas.
