Sparkling wine is a speciality of the Loire. And with examples such as this delicious pink fizz on offer, you can see why. Abbesse de Loire Rosé is made using Cabernet Franc (the region's top red grape) in exactly the same way as Champagne. That means the all-important secondary fermentation takes place in bottle, lending finesse and yeasty complexity to the creamy red fruit. The juice is drawn off the skins early enough to ensure a pale pink hue, but long enough to lend a lovely concentration of fruit and a bite of lemony crispness. Add the fine bubbled mousse and you have an irresistible sparkler to more than rival the renowned fizz of Champagne (and certainly at a better price). Chill and serve as a refreshing apéritif or with seafood.
