Sparkling wine is a speciality of the Loire - from their super lemony crisp Chenin to this delicious pink fizz made from the top red grape in this part of the Loire, Cabernet Franc. Abbesse is made in exactly the same way as Champagne, with the secondary fermentation taking place in bottle to lend real finesse and yeasty complexity to the creamy red fruit. The juice is drawn off the skins early on to ensure only a pale pink hue, but long enough to lend a lovely concentration of redcurrant and raspberry character and a bite of lemony crispness. Add the fine bubbled mousse and you have a wonderfully balanced sparkler to more than rival the renowned fizz of Champagne and certainly at a better price. Chill and serve as a refreshing apéritif.
