France’s Languedoc is a wonderful playground for winemakers. They’re able to pick and choose grape varieties and methods to produce exciting, rule breaking wines. This is certainly true for third generation winemaker Joseph Bousquet – a man with ambition! He inherited 15 hectares of vines, planted another dozen in the nearby aromatic scrubland, then in 1997 took over Domaine Les Quatre Pilas and its 6 hectares of vineyard. With his first vintage, in 2001, he won many awards. Joseph and his wife Sylvie now make a delicious range of wines. This white combines southern France’s Vermentino and the Rhône’s Roussanne, both grown on Joseph’s estate. Carefully fermented and lees aged, it’s creamy and richly fruity with a tasty balance of freshness.
