Peach Stone gains its luscious roundness from local speciality Grillo, the grape behind Sicily’s new breed of fine whites. It’s also crackling with energy thanks to a generous dash of Sauvignon Blanc grown on the island’s higher slopes, where cool breezes produce pristine, pure tasting, lemony and grassy fresh fruit. Lovely on its own and superb with all kinds of seafood. Federica recommends serving this with freshly grilled sardines drizzled with lemon.
