1 Take a drop of Sancerre to inspire, then tear up the rule book
… and track down the finest Sauvignon grapes you can find – regardless of where they come from. France has two other spots for lively, fresh, citrus-charged Sauvignon. The first is Bordeaux – where you’ll find it in the expensive fine whites of Pessac-Léognan. The second is further south, in Gascony, where the grape was first known as Sauvage Blanc (the wild white). Put them together, with a dash of the best of the Loire and you cannot give the label an address – it has to be called a humble Vin de France. Hence Sans Terre, meaning ‘without ground’.

Born and bred in Bordeaux, Jean-Marc Sauboua may have trained in his home town but he has made wines the world over – with an awards cabinet brimful of silverware as proof of his skills. But his private passion is Sauvignon Blanc.
