The first wines Bordeaux shipped to Britain (from the quayside by our Chai) weren't red, or white, but pink or pale-red, and came to be known - about 1,000 years ago - as 'clairet'.
For this pink we head to our own Château La Clarière Laithwaite, where our tiny production red claret has won GOLD every year for the last seven vintages. Here, as the ripe black Merlot grapes fall into the tanks, some burst and a clear, pink juice runs out.
Means a darker red and allows us to make a tiny amount of lovely rosé (just as the top Saint-Emilion names do). We whisk this pink juice off to ferment at Le Chai where we've all the latest (essential) chilling kit. It is FULL of fruit berry flavours. You couldn't get any more in! Our Summer guests love it - and you'll soon taste why it set that 1,000 year passion for Bordeaux … if you're quick!
