Serving suggestions: This is a weighty, full-flavoured yet velvety soft Cabernet. Serve with rare roast beef with Yorkshire pudding, pink roasted lamb, Chilli con carne or barbecued ribs. Drink by end 2009.

Australia is on the search for cooler climate regions. One of its more recently established is the Limestone Coast in the southeast of South Australia. So named because of its limestone-rich soil, it lies close to the Southern ocean and contains five different regions: Mount Benson, Robe, Naracoorte Ranges (which has named itself Wrattonbully), Coonawarra and Padthaway. Once this area was covered by the ocean. Slowly, over the centuries, the shells of the crustaceans in the water fell to the bottom, to produce the limestone soils for which the region is famed. Today, these limestone deposits provide excellent growing conditions and drainage for the vines. Some of Australia's finest Cabernets are made in this corner of Australia, as well as outstanding Chardonnay, Sauvignon Blanc and Riesling. This is a fabulous, one-off parcel of pure Cabernet from a family who was once based in Riverina, New South Wales, but has now acquired some vineyards in the highly sought-after Limestone Coast. Handpicking has ensured only the very best quality fruit is included in this wine, while a little gentle ageing in a mixture of French and American oak has lent gentle toasty spice and vanilla top notes to the dark, luscious fruit.
